Glad I got that off my chest.
Ok, today was just darn cute. I got to watch Zoe(almost 3) and Moses(1) who frequently appeared on here back in the day. I use to sit them every Monday but its gotten too difficult to lately. Fortunately I got to be with them this morning :)
First of all, we watched Ratatouille- does anyone else get insanely hungry while watching this? I instantly want good food and wine( when don't I?) . I think its kind of awesome that they drink wine the whole movie. Its.. Its weird for a kids film. But would it be accurately France without it? Nope.
Moment of the day:
Ok, so Zoe's dad is a pastor and its so cute cause she says the freaking funniest things that her mom and dad teach her. All things are true but.. she says them so matter of factly. For example- if you ask her if she needs make up she'll tell you SO confidently " No. I'm beautiful because God made me that way".
Uhhh, I'm still learning this and I'm 20 years older than her. Nice work to her parents haha..
So today she turns to me in the middle of the movie with DEEP conviction and says,
" Did YOU know.. that JESUS.. is ALIVE??"
I chuckled and said " Yeah!"
then she pointed across the room and said " He's RIGHT THERE!" where there was an illustration of Jesus hanging on the wall.
So good. I just threw my head back and cackled wildly.
For lunch I outdid myself a bit. I made a little rustic pizza type deal and it was freaking delicious. I got the idea from Health magazine but.. made it my own. Here's what I did:
Rustic Naan Pizza:
Ingredients:
- Garlic naan from Trader joes ( in the bread section of the store)
- 2 Tbsp Marinara sauce
-Sprinkle of goat cheese
- Mini heirloom or cherry tomatoes
-Fresh basil
-fresh wild arugula
- artichoke hearts
- olive oil
-Salt and pepper to taste
Here's how:
In a medium or small sauce pan sautee about a handful of arugula, choppd up artichoke hearts( about 1.5) and 5 or 6 halved mini heirloom tomatoes. Toss them around a bit in the olive oil adding salt and pepper. This should only be a minute or two so as to not make everything smooshy. Pre-heat oven to 350.
- Take one of the pieces of the naan and spread a tablespoon or two of marinara sauce. Take the veggies off of the burner and top your naan with them. Sprinkle goat cheese over the top ( along with a little bit of cheddar or mozzarella if you should so desire).
- Cook in the oven on a cookie sheet for about 15 minutes.
- Remove from the oven and sprinkle chopped fresh basil over the top.
- Stuff yo face.


There you have it, folks. I'm sure this can be switched up in a million different and delicious ways but, this is how I did it!
The naan was a great idea. The portion is perfect, too. I really am on the side of pizza not really needing much cheese.
Oh, just to share- here are some things I've been really enjoying lately that you should check out :
1) The Marriage Ref- SO ENTERTAINING. If you haven't heard of it it's basically this: A panel of celebrity judges ( Madonna, Tina Fey, Alec Baldwin, Jerry Seinfeld..etc) review an issue that a married couple is having. Typically, the couple is having a ridiculous dispute over a couple of things she insists on something he thinks is crazy- he responds with insisting something she thinks is crazy. They both plead their case and the judges get to decided who wins. Its so entertaining. Ahh...
2) The new season of GLEE- Don't get me started. Don't EVEN get me started.
3) The Local Natives. Its a band. I'm really really diggin their style.
4) Tax Returns. Ok so that's not really in the vein of new things I've enjoyed but hell, I'm enjoying mine.
Anyhow, this weekend should be a real treat. I'm hoping it warms up! The cold makes me an A-hole. (Ew) I'm goin for a long(er) run tomorrow and hopefully having breakfast with some legit ladies.
